WCA Vegan Cook-Along Monday 24th January at 6pm

We are excited to invite you to a vegan cook-along where we will be making quesadillas!

 

Here is the ingredients list which is flexible to suit your needs and hopefully reduce how much you need to buy:

 

Ingredients:

Core ingredients (if you need to omit some or substitute for other similar ingredients, no problem!)

  • Wholemeal/corn tortilla wraps

  • 1 red onion

  • 2 spring onions

  • 10 cherry tomatoes

  • Small bunch of fresh coriander (optional)

  • 1 fresh chilli (optional, could use chilli flakes as an alternative)

  • 1 avocado

  • 1 400g tin of black beans/kidney beans/black eyed beans (up to you!)

  • Spices (not essential to have all): 1 tsp ground cumin, 1/4 tsp of paprika, 1/4 tsp cinnamon

  • 1 tbsp Soy sauce

  • 1 lemon

  • Salt and pepper

Cheese extra

Choose 1 from the below options:

  1. Vegan cheese block/grated (Violife and Applewood are my favourites)

  2. Cashew cheese sauce (this will require a blender)

Additional ingredients needed: 200g cashew nuts (unroasted), 150ml vegan milk (preferably oat), garlic powder/1 clove of garlic

 

Equipment:

  • Chopping board

  • Sharp knife

  • Spoon

  • Spatula and wooden/plastic spoon

  • Frying pan (large enough for your wraps)

  • Small bowl

  • Colander (not essential)

  • Tsp and tbsp measure (not essential)

  • Grater (if using vegan cheese block)

  • Large bowl, measuring jug and blender (if doing cashew cheese)

  • Tea towel
